YONA YONA TOKYO BREWERY aims to offer more than just craft beer and delicious food; it also aims to create an experience that encompasses the space and the people involved. To maximize this experience, a massive 360-degree island bar counter was placed at the center of the restaurant. Starting from this imposing counter, the gazes and conversations between staff and guests, and among themselves, naturally intersect, creating a lively and energetic atmosphere in every direction. Whether visiting alone or toasting with a group, you'll naturally be swept up in the energy of the moment—this sense of unity is the essence of the experiential brewery restaurant YONA YONA TOKYO BREWERY aims to create. Another major feature, unveiled for the first time, is the on-site brewery. Craft beer is brewed, fermented, and completed right next to guests. This process itself becomes part of the landscape of the restaurant, enhancing the experience.

With the opening on Monday, March 30th just around the corner, preparations for Japan's largest brewery restaurant directly connected to a station are in the final stages of design and construction. To support this experience, YONA YONA TOKYO BREWERY has carefully considered every detail of its spatial design. The kitchen is open, allowing guests to see the expressions on their faces. The space allows guests to feel up close the sounds, aromas, and heat of the food and beer being prepared.

In addition, the craft beer brewed in-house changes with the seasons, and you can see, hear, and smell the brewing and fermentation process.

The combination of space, brewing, and cuisine will lead to new discoveries with each visit, expanding the experience beyond simply enjoying food and drinks. We hope you'll look forward to the upcoming opening of YONA YONA TOKYO BREWERY.

In addition, in order to move forward together with future partners even before the opening, we will be conducting crowdfunding on the support purchasing service "Makuake." A new craft beer exclusive to Shinagawa that can only be enjoyed here will soon be brewed

Craft beer is prepared in the brewery attached to the restaurant, and fermentation and aging take place here. One of the unique experiences at YONA YONA TOKYO BREWERY is being able to see up close how beer is born and aged in Shinagawa. In this environment, with the desire to deliver a beer worthy of a flagship store, we worked with YO-HO Brewing to develop an all-new craft beer that will become the signature menu item of this brewery restaurant. The name is "Gate One." Based on the concept of "the perfect first beer to quench your thirst after work," it combines a refreshing taste with the vibrant hop aroma that is characteristic of craft beer.

This location offers an experience that allows you to enjoy freshly brewed beer at its freshest, and we position it as the first glass you should pick up. We aim to be an opportunity for craft beer fans, as well as those who don't usually drink much craft beer, business people, and foreign tourists visiting Japan, to experience the world of craft beer.

To ensure that this experience doesn't end within the store, customers can not only taste the beer brewed in-store, but also take it out fresh from a dedicated takeaway tap, allowing them to enjoy freshly brewed beer at home.

Experience the world of craft beer through cuisine

The restaurant is also very creative in pairing craft beer with food, allowing customers to fully enjoy the flavor and aroma of the beer. They offer dishes that prioritize compatibility with beer, from the seasoning and ingredient combinations to the texture, and call this style "beer-friendly."

The signature menu item this time is "Roast Chicken Made with Domestic Chicken," which has been evolving since the restaurant opened in pursuit of something that pairs well with beer.

After many years of trial and error, they finally arrived at the idea of ​​eliminating unnecessary seasonings and carefully bringing out the flavor using only salt. This time, they've taken their commitment even further, starting with the selection of chicken. They use Iwate Prefecture's "Nasai Chicken," marinated in bouillon to create incredibly juicy meat and crispy grilled skin, which has a soft, just-right texture and pairs perfectly with the gentle sweetness of the caramel malt in "Yona Yona Ale." Further research and improvements have been made to further enhance the beer pairing experience.

We also offer a wide variety of other dishes that are carefully selected to pair with beer. Our craft sausages, in particular, are made with the utmost care, from selecting the best skin to stuffing in-store, to ensure the delicious taste that can only be achieved by hand. Our diverse lineup of sausages, each with its own unique aroma, flavor, and texture, are carefully crafted to be enjoyed paired with a beer.

All dishes are carefully designed to pair well with beer, and seasonal limited menus are also available, allowing you to enjoy discovering new flavors and pairings every time you visit.

In preparation for our opening on March 30th, we are carefully creating each and every aspect of the bar, imagining what kind of drink will be served, how time will flow, and what feelings and expressions our guests will have while they spend their time there, while also giving meticulous consideration to the lighting and acoustics of the bar. We are proceeding with preparations with the sincere hope that everyone will be able to experience the experience that will be born when all of these things come together.
