■ Summer seasonal foods
Spicy corn fritters (720 yen)
A simple dish made by deep-frying corn, a staple summer vegetable, and sprinkling it with original spicy powder!
This is a long-selling product that is ordered by many customers every year.
Recommended pairing: Craftsaurus Brut IPA
Zucchini carpaccio (850 yen)
This dish uses plenty of zucchini, a summer vegetable, and has a refreshing appearance. The light sauce, made with white wine vinegar and lemon as a base, brings a refreshing sensation that is perfect for the hot and humid summer. Finishing it off with a sprinkling of coarsely ground black pepper adds a spicy kick, making it an addictively delicious dish.
Recommended pairing: My beer, your beer
Grilled conger eel with paprika sauce (1,280 yen)
This dish is made with a generous amount of conger eel, known as a high-class summer fish. Fresh conger eel caught in Awaji Island, famous for its conger eel production, is carefully seared on the skin and flesh to bring out its fragrant flavor and create a crisp texture. In addition, the sauce made from roasted paprika brings out the umami of the conger eel even more, allowing you to enjoy a deeper taste.
Recommended pairing: My beer, your beer
Edamame green truffle (650 yen)
This is a new type of green truffle made by forming cream cheese into a sphere and covering it with edamame. We paid particular attention to the flavor, and formed Niigata Prefecture's green soybeans, which have a tea bean flavor, into a zunda shape to bring out the maximum aroma and umami of the edamame. Walnuts and a small amount of garlic are the keys to the deliciousness and texture.
Recommended pairing: Yamanoue Newi
■ Summer seasonal course: 6,000 yen per person
