The "TANKAKU FAIR 2026" will be held from Monday, October 19, 2026, to Sunday, November 15, 2026, featuring "Iwate Yamagata Village Tankaku Beef" raised in Yamagata Town, Kuji City, Iwate Prefecture.
During the fair, you can enjoy various cuts of Tankaku beef in dishes that each brand excels at, such as steak, tagliata, churrasco, carpaccio, and shabu-shabu.
Tankaku beef is the common name for the Japanese Shorthorn, one of the four Wagyu breeds. Its appeal lies not in its fat content, but in the rich umami of its lean meat that can be tasted with every bite.
Wonder Table aims to consistently provide high-quality domestic lean meat. Since 2015, we have been purchasing Tankaku calves and raising them in cooperation with producers in Yamagata Town, Iwate Prefecture.
The "TANKAKU FAIR 2026" is not just an opportunity to taste rare beef, but also to convey to our customers the traditional farming methods passed down in the region, the passion of the producers, and the inherent appeal of Tankaku beef through our dishes.

Why Tankaku Beef now?
Tankaku beef is the common name for the Japanese Shorthorn, an indigenous Japanese Wagyu breed. One of its characteristics is the "Summer Mountain, Winter Village" farming method, where cattle graze in the mountains during summer and stay in barns in the village during winter. In spring, they go up into the mountains with their mothers, graze in pastures during summer, return to the village in autumn, and spend winter in barns. While this method raises cattle in a near-natural environment over a long period, it requires considerable effort and labor. Consequently, the aging and decreasing number of producers have become a challenge in passing down traditional fattening methods to the next generation. Approximately 7,000 Tankaku cattle are produced nationwide annually, with about 2,500 of them in Iwate Prefecture. In Yamagata Town, Iwate Prefecture, where Wonder Table commissions the fattening of purchased calves, around 250 head are raised annually. Tankaku beef is not only a rare breed, but its production base is also shrinking. We believe that by choosing, eating, and continuously promoting this beef, we can help preserve the Japanese food culture of Tankaku beef for future generations.

We purchase calves directly and commission their fattening to producers in Yamagata Town, Iwate Prefecture. We have been exploring methods to bring out the deliciousness of Tankaku beef in collaboration with producers, while verifying changes in meat quality based on feed and age. The raised cattle are then served at restaurants operated by Wonder Table. "Raising," "cooking," and "conveying."
As a restaurant company, we aim to connect the appeal of Tankaku beef to the next generation through our unique approach, working hand-in-hand with producers.
