We only use beef that has been graded "Prime," the highest rank, by the United States Department of Agriculture (USDA). Expert staff appointed by the owner of our New York flagship store carefully select the highest quality Black Angus beef, which is air-shipped from the United States unfrozen and chilled. In our Tokyo store's dedicated aging warehouse, we dry-age the beef using the same method as our New York flagship store, for a minimum of 28 days. While strictly controlling temperature and humidity, our skilled craftsmen carefully assess the condition of the meat, bringing out its rich flavor and tender texture.
