[Terre de Truffle Tokyo] Savor the mellow flavors of autumn with the "New Soba Noodles x Autumn Truffle" course, available only in October and November

Terre de Truffle Tokyo, a truffle specialty restaurant, will be offering an autumn-only course using new soba noodles from Nagano Prefecture for a limited time from Wednesday, October 1st to Sunday, November 30th, 2025.

A special autumn dish: New soba noodles and autumn truffles

This limited-time course features a dish made with new soba noodles from Nagano Prefecture. Featuring the rich aroma and firm texture of freshly harvested buckwheat flour, it accentuates the sweetness and richness that is unique to autumn soba. Layered on top is autumn truffles, which give off a mellow aroma. The delicate flavor of the soba is further enhanced, and the overlapping aromas of both create a profound harmony.
The dish is simply prepared with beef stock, egg yolk, new soba noodles, and autumn truffles. It is a special dish that symbolizes the season, bringing out the full appeal of the ingredients themselves.
